Description

Ingredients

  • 1 pound large shrimp (raw, peeled, deveined)
  • ½ cup all-purpose flour
  • 1 large egg
  • 1 cup Panko breadcrumbs
  • Neutral oil spray (canola or avocado)
  • ½ cup mayonnaise (full fat)
  • 3 tablespoons Sriracha
  • 2 tablespoons honey
  • 1 tablespoon lemon juice (freshly squeezed)
  • ½ teaspoon garlic powder
  • 1 teaspoon sugar (optional)
  • 12 teaspoons water
  • 2 stalks green onions (sliced, for garnish)
  • 1 tablespoon sesame seeds (toasted, for garnish)
  • White rice (for serving)

Instructions

  1. Thaw frozen shrimp in cold water if necessary, then pat them completely dry with paper towels.
  2. In a large bowl, toss the dry shrimp with flour, salt, pepper, and garlic powder until lightly coated. Shake off excess flour.
  3. Whisk the egg with a pinch of salt and pepper in a small bowl.
  4. Place Panko breadcrumbs on a plate or wide shallow dish.
  5. Dip each flour-coated shrimp into the egg wash, letting excess drip off, then roll in Panko to coat. Press gently to adhere. Place on a clean plate.
  6. Preheat air fryer to 400°F (200°C) for 3 minutes if possible. Lightly spray the basket with oil.
  7. Arrange shrimp in a single layer in the air fryer basket (cook in batches if needed to avoid overcrowding). Spray tops generously with oil.
  8. Air fry for 4 minutes, then flip shrimp and spray other side with oil. Cook for another 4-6 minutes until pink, opaque, and crispy.
  9. While shrimp cook, whisk together mayonnaise, Sriracha, honey, lemon juice, garlic powder, and sugar in a medium bowl.
  10. Thin the sauce with water, one teaspoon at a time, until it reaches a drizzle-able consistency.
  11. Transfer hot shrimp to a large bowl and toss with half to two-thirds of the sauce.
  12. Garnish with green onions and sesame seeds. Serve immediately with steamed white rice.

Notes

Ensure shrimp are completely dry before coating to achieve maximum crispiness. Do not overcrowd the air fryer basket; cook in batches if necessary. The sauce can be made ahead and stored in the fridge for up to 5 days. For a lighter version, substitute half the mayonnaise with Greek yogurt.
