Description

A crispy, spicy, and sweet shrimp recipe designed for solo diners, using an air fryer for a healthier, mess-free meal that comes together in about 15 minutes.

  • 12 oz (340g) frozen raw shrimp, peeled and deveined
  • 1 large egg white
  • Splash of milk or water
  • ½ cup (40g) panko breadcrumbs
  • ½ teaspoon garlic powder
  • Salt and black pepper to taste
  • Cooking spray or oil for misting
  • ½ cup (120g) full-fat mayonnaise
  • ¼ cup (60ml) sweet chili sauce
  • 12 tablespoons sriracha
  • 1 tablespoon honey
  • ½ teaspoon garlic powder
  • Optional: Sesame seeds and chopped green onions for garnish

Instructions

  1. Thaw frozen shrimp under cold water for 5-10 minutes, then pat them completely dry with paper towels. Season with salt and pepper.
  2. In a shallow bowl, whisk the egg white with a splash of milk until smooth. In another shallow bowl, spread out the panko breadcrumbs mixed with a pinch of garlic powder.
  3. Dip each shrimp into the egg wash, let excess drip off, then press into the panko to coat fully. Place in the air fryer basket in a single layer.
  4. Lightly spray the breaded shrimp with oil.
  5. Air fry at 390°F (200°C) for 8-10 minutes, flipping halfway through, until golden brown and opaque.
  6. While shrimp cook, whisk together mayonnaise, sweet chili sauce, sriracha, honey, and garlic powder in a bowl to make the sauce.
  7. Transfer cooked shrimp to the bowl with sauce and toss gently to coat.
  8. Serve immediately, garnished with sesame seeds and green onions if desired.

Notes

Ensure shrimp are completely dry before breading to prevent soggy coating. Do not overcrowd the air fryer basket; cook in batches if necessary. Toss shrimp in sauce immediately before eating to maintain crispiness. Sauce can be made ahead and stored in the fridge for up to a week.
