Description
A creamy, spicy, and tangy buffalo chicken dip made with just four simple ingredients. This beginner-proof recipe is perfect for game day, potlucks, or a quick snack.
Ingredients
Scale
- 8 oz (225g) block cream cheese, softened
- ½ cup (120ml) Frank’s RedHot sauce
- ½ cup (120ml) creamy ranch dressing
- 2 cups (200g) shredded rotisserie chicken
- 1 cup shredded cheddar cheese (optional topping)
- ½ cup blue cheese crumbles (optional topping)
- 2 stalks green onions, sliced (optional garnish)
Instructions
- Preheat oven to 350°F (175°C).
- Cut the block of cream cheese into quarters and let it sit on the counter for 10 minutes to soften.
- In a medium mixing bowl, combine the softened cream cheese, Frank’s RedHot sauce, and ranch dressing. Stir vigorously until smooth and uniform in color. If lumps remain, microwave for 15-20 seconds and stir again.
- Fold in the shredded chicken until coated but not mashed.
- Transfer the mixture to a 9×9 inch square baking dish or small 9-inch pie plate.
- Sprinkle shredded cheddar cheese (and blue cheese crumbles, if using) evenly over the top.
- Bake for 15-20 minutes until the cheese is melted, bubbly, and the edges are slightly browned.
- Remove from oven and let sit for 5 minutes to set slightly.
- Garnish with sliced green onions and serve immediately with celery sticks, carrot sticks, or tortilla chips.
Notes
Ensure cream cheese is softened to avoid lumps. For a lighter version, use light cream cheese and low-fat ranch. This dip can also be made in a crockpot on low for 2 hours. Do not freeze as the texture may become grainy.
