  • 8 oz (225g) block cream cheese, softened
  • ½ cup (120ml) Frank’s RedHot sauce
  • ½ cup (120ml) creamy ranch dressing
  • 2 cups (200g) shredded rotisserie chicken
  • 1 cup shredded cheddar cheese (optional topping)
  • ½ cup blue cheese crumbles (optional topping)
  • 2 stalks green onions, sliced (optional garnish)

Instructions

  1. Preheat oven to 350°F (175°C).
  2. Cut the block of cream cheese into quarters and let it sit on the counter for 10 minutes to soften.
  3. In a medium mixing bowl, combine the softened cream cheese, Frank’s RedHot sauce, and ranch dressing. Stir vigorously until smooth and uniform in color. If lumps remain, microwave for 15-20 seconds and stir again.
  4. Fold in the shredded chicken until coated but not mashed.
  5. Transfer the mixture to a 9×9 inch square baking dish or small 9-inch pie plate.
  6. Sprinkle shredded cheddar cheese (and blue cheese crumbles, if using) evenly over the top.
  7. Bake for 15-20 minutes until the cheese is melted, bubbly, and the edges are slightly browned.
  8. Remove from oven and let sit for 5 minutes to set slightly.
  9. Garnish with sliced green onions and serve immediately with celery sticks, carrot sticks, or tortilla chips.

Notes

Ensure cream cheese is softened to avoid lumps. For a lighter version, use light cream cheese and low-fat ranch. This dip can also be made in a crockpot on low for 2 hours. Do not freeze as the texture may become grainy.
