Description

  • 1.5 pounds large shrimp, peeled and deveined
  • 2 tablespoons blackened seasoning (divided)
  • 2 tablespoons butter (melted, for shrimp)
  • 3 cloves garlic, minced (for shrimp)
  • 3 tablespoons butter (for sauce)
  • 3 tablespoons all-purpose flour
  • 2 cups heavy cream
  • 1/2 cup chicken broth
  • 4 cloves garlic, minced (for sauce)
  • 1.5 cups freshly grated Parmesan cheese
  • 1/2 cup white wine (optional)
  • 1 pound fettuccine or linguine
  • 1 tablespoon salt (for pasta water)
  • Fresh parsley for garnish

Instructions

  1. Pat shrimp completely dry with paper towels. Toss with 1 tablespoon blackened seasoning and 2 tablespoons melted butter. Set aside.
  2. Bring a large pot of salted water to a boil. Cook pasta until al dente. Reserve 1 cup of pasta water before draining.
  3. Heat a large skillet over medium-high heat. Add shrimp in a single layer (cook in batches if necessary). Cook for 2 minutes per side until charred and opaque. Remove to a plate.
  4. In the same skillet, melt 3 tablespoons butter over medium heat. Whisk in flour and cook for 1-2 minutes until golden.
  5. Slowly whisk in chicken broth and white wine. Simmer for 1 minute.
  6. Slowly whisk in heavy cream. Add minced garlic and remaining 1 tablespoon blackened seasoning. Simmer for 3-4 minutes until thickened.
  7. Remove skillet from heat. Stir in Parmesan cheese until melted and smooth. Add splash of reserved pasta water if needed to adjust consistency.
  8. Toss cooked pasta with the sauce. Top with blackened shrimp and garnish with fresh parsley. Serve immediately.

Notes

Pat shrimp dry to ensure proper blackening. Do not crowd the pan when cooking shrimp. Remove pan from heat before adding cheese to prevent breaking. Save pasta water to help emulsify the sauce. This dish does not freeze well due to the dairy sauce.
