Bourbon Peach Cobbler: 5-Ingredient Easy Labor Day Dessert

  • Author: Thea
  • Total Time: 1 hour
  • Yield: 8 servings 1x

Description

A simple, foolproof dessert featuring juicy peaches and a hint of bourbon under a fluffy biscuit topping. This easy cobbler requires only five ingredients and minimal prep time, making it perfect for holidays or weeknight treats.

Ingredients

Scale
  • 67 medium fresh peaches, peeled and sliced (about 3 lbs)
  • ½ cup granulated sugar
  • 1 tablespoon lemon juice
  • 2 tablespoons cornstarch
  • 2 tablespoons bourbon
  • 1 cup all-purpose flour
  • 1 teaspoon baking powder
  • ½ teaspoon salt
  • ½ cup butter, melted
  • Vanilla ice cream, for serving

Instructions

  1. Preheat oven to 375°F (190°C) and grease a 9×9 inch baking dish with butter or non-stick spray.
  2. In a large bowl, combine sliced peaches, sugar, lemon juice, cornstarch, and bourbon. Toss until peaches are evenly coated.
  3. Pour the peach mixture into the prepared baking dish and spread evenly.
  4. In a medium bowl, whisk together flour, baking powder, and salt.
  5. Pour melted butter into the dry ingredients and stir with a spatula or fork until a shaggy, lumpy dough forms. Do not overmix.
  6. Spoon the topping mixture over the peaches, leaving some gaps for the fruit to bubble up.
  7. Bake for 45-50 minutes, or until the topping is golden brown and the filling is bubbling vigorously.
  8. If the topping browns too quickly, cover loosely with foil for the last 10 minutes.
  9. Let the cobbler cool for at least 15 minutes to allow the filling to set.
  10. Serve warm with a generous scoop of vanilla ice cream.

Notes

Fresh peaches are preferred, but canned or frozen peaches can be used. If using canned peaches, drain well to prevent a watery cobbler. If using frozen, thaw and drain excess liquid. The bourbon flavor is subtle and adds depth without making the dessert boozy. Letting the cobbler cool for 15 minutes is crucial to allow the cornstarch to thicken the filling. Leftovers can be stored in the fridge for up to 4 days.
