- 1.5 lbs carrots, washed and trimmed
- ½ cup (113g) unsalted butter
- 3 tablespoons honey
- 2 teaspoons fresh thyme leaves
- ½ teaspoon kosher salt
- ¼ teaspoon black pepper (optional)
Instructions
- Preheat oven to 400°F (200°C). Line a large rimmed sheet pan with parchment paper or foil and lightly spray with cooking spray.
- Melt the butter in a small saucepan over medium heat. Stir constantly until the foam subsides, brown specks form at the bottom, and the butter smells like toasted hazelnuts (about 5-7 minutes). Immediately remove from heat and pour into a large bowl to stop cooking.
- While the butter browns, chop the carrots into 2-inch lengths. If thick, slice in half lengthwise. Add the carrots to the bowl with the brown butter.
- Add the honey, thyme leaves, salt, and pepper to the bowl. Toss thoroughly to coat every carrot piece evenly.
- Spread the carrots in a single layer on the prepared sheet pan. Avoid crowding the pan.
- Roast for 20-25 minutes, stirring halfway through (around the 10-minute mark), until carrots are tender-crisp and caramelized with brown edges.
- Serve immediately.
Notes
Do not walk away while browning the butter as it can burn quickly. Use fresh thyme for best flavor; if using dried, reduce amount by half. Do not crowd the pan or carrots will steam instead of roast. Leftovers can be stored in the fridge for up to 3 days.
