A quick, budget-friendly single-serving dinner featuring seared bone-in pork chops with caramelized apples in a nutty brown butter sage sauce.

- 1 bone-in center-cut pork chop (8–10 oz / 225-280g)
- 1 medium apple, sliced into wedges (Honeycrisp or Granny Smith, approx. 150g)
- 3 tablespoons unsalted butter (45g)
- 1 teaspoon dried sage or 5–6 fresh sage leaves
- 1 clove garlic, minced
- 1 tablespoon brown sugar (15g)
- 1 teaspoon apple cider vinegar or white vinegar (5ml)
- 1 tablespoon olive oil or vegetable oil
- Salt and black pepper to taste
- Optional: 1 tablespoon chopped walnuts
- Optional: 1 tablespoon dried cranberries
Instructions
- Pat the pork chop dry with paper towels and season both sides generously with salt and pepper. Let it sit at room temperature for 15 minutes if possible.
- Core the apple and slice into thin wedges (1/4 inch). Toss with brown sugar and a pinch of salt.
- Heat oil in an 8-10 inch skillet over medium-high heat. Sear the pork chop for 2-3 minutes per side until golden and internal temperature reaches 145°F (63°C). Remove to a plate and tent with foil.
- Reduce heat to medium. Add sliced apples to the same pan. Cook for 3-4 minutes until soft and golden, stirring occasionally.
- Add minced garlic and sage to the apples in the last 30 seconds of cooking.
- Turn heat to low. Add butter to the pan and swirl until melted, amber-colored, and nutty (about 2 minutes). Do not let it burn.
- Remove pan from heat and stir in apple cider vinegar.
- Return pork chop to the pan, spooning the brown butter and apples over the top. Let sit for 1 minute to reheat gently before serving.
Notes
Do not overcook the pork; 145°F is the target temperature. Watch the butter closely as it burns easily. Use bruised apples for cooking to save money. Scrape the browned bits from the pork sear into the apple mixture for extra flavor. If using fresh sage, chop finely.
