- 2 pounds boneless, skinless chicken breasts
- 1 cup Frank’s RedHot Original Cayenne Pepper Sauce
- 8 ounces full-fat brick-style cream cheese, cubed
- 12–16 slider buns (Hawaiian rolls, dinner rolls, or small sandwich buns)
- 1 teaspoon garlic powder (optional)
- 2 tablespoons melted butter (optional)
- ½ cup blue cheese crumbles (optional)
- Ranch dressing for drizzling (optional)
Instructions
- Place chicken breasts in the bottom of a 6-quart slow cooker. If breasts are large, cut them in half horizontally.
- Pour buffalo hot sauce over the chicken. Add garlic powder if using.
- Cut cream cheese into 1-inch cubes and scatter them over the chicken and sauce.
- Cover and cook on Low for 6-7 hours or on High for 3-4 hours, until chicken reaches 165°F and shreds easily.
- Remove chicken from slow cooker and shred using two forks.
- Return shredded chicken to the slow cooker and stir to coat in the sauce. Adjust consistency with chicken broth or water if needed.
- Slice slider buns. For best texture, brush cut sides with melted butter and toast in a 350°F oven for 2-3 minutes.
- Pile the cheesy buffalo chicken onto the buns and drizzle with ranch or blue cheese dressing. Serve immediately.
Notes
Cube the cream cheese to ensure it melts evenly. Toasting the buns prevents them from getting soggy. The chicken mixture can be made up to 3 days in advance or frozen for up to 3 months (do not freeze assembled sliders).
