  • ¾ cup (150g) granulated sugar
  • 1 large egg, room temperature
  • 1 teaspoon vanilla extract
  • 1 ½ cups (190g) all-purpose flour
  • 1 teaspoon baking soda
  • ½ teaspoon baking powder
  • 1 teaspoon cinnamon
  • ¼ teaspoon nutmeg
  • ½ teaspoon salt
  • 1 cup (170g) semi-sweet or dark chocolate chips
  • ½ cup chopped walnuts or pecans (optional)

Instructions

  1. Preheat oven to 350°F (175°C). Grease a 9×5-inch loaf pan and line with parchment paper.
  2. In a large bowl, mash bananas until smooth. Add melted butter, sugar, egg, and vanilla extract; whisk until well combined.
  3. Shred zucchini and squeeze out excess moisture using a clean kitchen towel or paper towels.
  4. In a separate bowl, whisk together flour, baking soda, baking powder, cinnamon, nutmeg, and salt.
  5. Pour dry ingredients into wet ingredients and gently fold until just combined. Do not overmix.
  6. Fold in shredded zucchini and chocolate chips (and nuts if using) until evenly distributed.
  7. Pour batter into prepared pan and smooth the top.
  8. Bake for 50-60 minutes, or until a toothpick inserted into the center comes out clean. Cover with foil if browning too quickly after 30 minutes.
  9. Cool in the pan for 10 minutes, then transfer to a wire rack to cool completely before slicing.

Notes

Squeeze excess moisture from zucchini to prevent soggy bread. Use very ripe bananas for maximum sweetness and moisture. Do not overmix the batter to avoid a dense texture. Store in an airtight container at room temperature for up to 3 days, or freeze slices for up to 3 months.
