Cinnamon Roll Sugar Cookies: Best Easy Recipe

  • Author: Thea
  • Total Time: 45 minutes
  • Yield: 12 servings 1x

Description

Soft, chewy cinnamon roll sugar cookies topped with a tangy cream cheese icing. This easy recipe can be made from scratch or using store-bought dough, making it perfect for breakfast, dessert, or a quick treat.

Ingredients

Scale
  • 2 cups (500g) Sugar Cookie Dough (homemade or store-bought refrigerated cinnamon roll dough)
  • 4 tablespoons (60g) Unsalted Butter, melted
  • ½ cup (100g) Granulated Sugar
  • 2 teaspoons Ground Cinnamon
  • 1 teaspoon Pure Vanilla Extract
  • 4 ounces (115g) Full-fat block Cream Cheese, room temperature
  • 1 cup (120g) Powdered Sugar, sifted
  • 12 tablespoons Heavy Cream
  • ½ teaspoon Vanilla Extract
  • A pinch of Salt
  • Optional: Chopped Pecans

Instructions

  1. Prepare the dough: If using store-bought dough, let it sit at room temperature for 15 minutes. If making from scratch, mix butter, sugar, egg, and vanilla until smooth, then add flour and baking powder until just combined. Chill dough for at least 30 minutes.
  2. Preheat oven to 350°F (175°C) and line two baking sheets with parchment paper.
  3. Mix the cinnamon sugar: In a small bowl, whisk together granulated sugar and ground cinnamon.
  4. Roll and cut: On a lightly floured surface, roll dough to ¼-inch thickness. Cut into circles using a 3-inch cookie cutter. Place on baking sheets, leaving 1 inch between cookies.
  5. Roll in cinnamon sugar: Coat each cookie thoroughly in the cinnamon sugar mixture on all sides.
  6. Bake: Bake for 12-15 minutes until edges are golden but centers still look soft. Do not overbake.
  7. Make the icing: While cookies cool, beat cream cheese until smooth. Add powdered sugar, vanilla, salt, and heavy cream. Beat until desired consistency is reached.
  8. Cool completely: Let cookies cool on the baking sheets until room temperature.
  9. Assemble: Drizzle cream cheese icing over cooled cookies. Sprinkle with extra cinnamon sugar if desired. Serve immediately or store in an airtight container.

Notes

Chill dough before rolling to prevent sticking and ensure cookies hold their shape. Use room temperature cream cheese for smooth icing. Sift powdered sugar to avoid lumps. Cool cookies completely before icing to prevent melting. Can freeze dough or baked cookies (without icing) for up to 3 months.
