  • 2 ½ cups (315g) all-purpose flour
  • 1 tablespoon granulated sugar
  • 1 teaspoon salt
  • 68 tablespoons ice water
  • 6 cups (about 900g) fresh blueberries
  • ¾ cup (150g) granulated sugar
  • 3 tablespoons cornstarch
  • 2 tablespoons fresh lemon juice
  • 1 teaspoon lemon zest
  • 1 teaspoon vanilla extract
  • 1 tablespoon butter, cut into small pieces
  • 2 tablespoons heavy cream or egg wash
  • 12 tablespoons sand sugar or coarse sugar

Instructions

  1. Whisk together flour, sugar, and salt in a large bowl. Cut in cold butter until pea-sized chunks remain with some larger flat pieces.
  2. Gradually add ice water, one tablespoon at a time, mixing gently until dough just starts to clump. Divide into two disks, wrap in plastic, and refrigerate for at least 1 hour.
  3. Toss blueberries with sugar, cornstarch, lemon juice, lemon zest, and vanilla in a large bowl. Set aside.
  4. Roll out the larger dough disk into a 12-inch circle. Drape into a 9-inch pie dish, pressing gently without stretching. Trim edges, leaving a ½-inch overhang.
  5. Pour filling into the crust. Dot top with 1 tablespoon butter. Roll out smaller disk and place on top (full circle with vents or lattice).
  6. Brush top with heavy cream or egg wash and sprinkle with sand sugar.
  7. Preheat oven to 400°F (200°C). Bake on a baking sheet for 20 minutes, then reduce heat to 375°F (190°C) and bake for another 30-40 minutes until golden and bubbling.
  8. Cool completely on a wire rack for at least 3-4 hours before slicing to allow filling to set.

Notes

Keep all ingredients cold for a flaky crust. Do not stretch the dough when placing it in the pan to prevent shrinkage. If using frozen blueberries, do not thaw them and increase cornstarch to 4 tablespoons. Let the pie cool completely before cutting to ensure the filling sets properly.
