  • 1 cup (240ml) heavy whipping cream, cold
  • 2 tablespoons confectioners’ sugar
  • 1/2 teaspoon vanilla extract

Instructions

  1. Preheat oven to 350°F (175°C) and grease a 9×13 inch baking pan.
  2. Wash and hull strawberries. Slice if large, leave whole if small. Place in a large bowl, sprinkle with 1/4 cup sugar, toss gently, and set aside to macerate.
  3. In a medium bowl, whisk together flour, baking powder, and salt.
  4. In another bowl, mix melted butter, 1/2 cup sugar, milk, and 1 teaspoon vanilla.
  5. Pour wet ingredients into dry ingredients and stir gently with a spatula or fork until just combined. Do not overmix.
  6. Spread thick batter evenly into the prepared pan.
  7. Bake for 20-25 minutes until top is golden brown and a toothpick comes out clean.
  8. Let cake cool in the pan for 10 minutes until safe to handle.
  9. While cake cools, whip heavy cream, confectioners’ sugar, and 1/2 teaspoon vanilla until soft peaks form.
  10. Tear the warm cake into rustic chunks and place in a serving dish.
  11. Pour strawberries and their syrup over the cake chunks.
  12. Dollop whipped cream on top and gently mix or serve in layers.
