Description
A thick, velvety frozen drink made with frozen pineapple, full-fat coconut milk, and lime juice. This easy, customizable recipe takes only 5 minutes to blend and tastes like a tropical vacation.

- 3 cups frozen pineapple chunks
- 1 can (400ml) full-fat coconut milk
- 2 tablespoons fresh lime juice
- 3–4 ounces white rum (optional)
- 1/2 cup ice (optional, if pineapple isn’t frozen solid)
- 2 tablespoons coconut cream (optional, for extra richness)
- 1/2 teaspoon vanilla extract (optional)
Instructions
- If using fresh pineapple, peel, chop into 1-inch chunks, and freeze solid for at least 4 hours or overnight.
- Measure out 3 cups of frozen pineapple chunks.
- Shake the can of coconut milk well and measure out 1 cup.
- Juice the lime to get 2 tablespoons of fresh juice.
- Add frozen pineapple, coconut milk, lime juice, and rum (if using) to a high-speed blender.
- Blend on low speed, gradually increasing to high, for 30-45 seconds until thick and creamy.
- Check consistency; if too thick, add a splash of water or coconut milk. If too thin, add more frozen pineapple or ice.
- Pour into chilled glasses and serve immediately.
- Garnish with pineapple wedge, mint, or toasted coconut flakes.
Notes
Use frozen fresh pineapple chunks instead of canned for the best texture. Full-fat coconut milk is essential for creaminess. Serve immediately as the drink melts quickly. For a non-alcoholic version, skip the rum and add a splash of vanilla extract.
