Creamy Peanut Butter Banana Oats: 5-Minute Easy Dinner

  • Author: Thea
  • Total Time: 4-5 minutes
  • Yield: 1 serving 1x

Description

A quick, comforting, and nutritious breakfast made in the microwave in under five minutes. This creamy oatmeal combines rolled oats, peanut butter, and banana for a filling meal that provides sustained energy without the mid-morning crash.

Ingredients

Scale
  • 1/2 cup (40g) Old-Fashioned Rolled Oats
  • 1/2 cup (120ml) Milk (dairy, almond, oat, or soy)
  • 2 tablespoons (30ml) Water
  • 2 tablespoons (32g) Creamy Peanut Butter
  • 1 medium Ripe Banana (half mashed into oats, half sliced for topping)
  • 1 teaspoon Honey or Maple Syrup (optional)
  • 1 teaspoon Extra Peanut Butter (for topping)
  • 1/2 Banana, sliced (for topping)
  • 1 teaspoon Chia Seeds or Flaxseed (optional)
  • A pinch of Cinnamon

Instructions

  1. Combine the rolled oats, milk, and water in a large microwave-safe bowl (at least 12 ounces) and stir briefly to distribute liquid.
  2. Microwave on high for 90 seconds to heat the liquid and start cooking the oats.
  3. Remove the bowl carefully and stir thoroughly to break up clumps. Mash half of the banana into the hot oats and mix well.
  4. Microwave again on high for 60 seconds to finish cooking the oats.
  5. Remove from microwave and stir in the 2 tablespoons of creamy peanut butter until melted and incorporated. Let the bowl sit for 1 minute to thicken.
  6. Top with remaining sliced banana, a drizzle of honey (if using), a sprinkle of cinnamon, and a swirl of extra peanut butter. Serve immediately.

Notes

Use old-fashioned rolled oats for best texture; quick oats may get mushy. Ensure bananas are ripe (brown-spotted) for natural sweetness. Stirring between microwave intervals is crucial to prevent rubbery oats. If using natural peanut butter, stir well before measuring. Oats continue to absorb liquid after cooking, so let them rest for the full minute.
