Ingredients

  • 1/2 cup (40g) espresso beans, freshly ground
  • 1 cup (240ml) filtered water
  • 1 cup (240ml) whole milk (or oat milk for dairy-free)
  • 2 tablespoons (30ml) heavy cream
  • 1/2 cup (100g) granulated sugar
  • 2 tablespoons (30g) unsalted butter
  • 1/4 cup (60ml) heavy cream (for caramel sauce)
  • 1/2 teaspoon fleur de sel or sea salt
  • 1 teaspoon vanilla extract
  • 1 cup (150g) ice cubes
  • Extra caramel drizzle for topping

Instructions

  1. Make the salted caramel sauce: In a small saucepan, combine 1/2 cup sugar and 2 tablespoons water. Stir gently to moisten sugar, then place over medium heat without stirring until it turns amber-colored (5-7 minutes).
  2. Remove from heat and carefully add 2 tablespoons butter, stirring until melted.
  3. Slowly add 1/4 cup heavy cream and 1/2 teaspoon salt, stirring until smooth. Add 1 teaspoon vanilla and let cool slightly. This yields about 3/4 cup sauce.
  4. Brew the espresso: Brew 2 shots of espresso (about 2 ounces) or 1 cup of very strong coffee. Let it cool for a few minutes.
  5. Froth the milk: Pour 1 cup whole milk into a pitcher and froth until creamy and slightly foamy using a handheld frother or whisk.
  6. Assemble the drink: Fill a 16-ounce glass with ice cubes. Pour in 2-3 tablespoons of salted caramel sauce and swirl to coat the glass.
  7. Pour the cooled espresso over the ice, then slowly pour the frothed milk over the espresso to create layers.
  8. Top with a drizzle of extra caramel sauce and a tiny pinch of sea salt. Serve immediately with a straw.

Notes

For dairy-free, use oat milk and coconut cream. Replace butter in caramel with coconut oil. Use large ice cubes to prevent dilution. Caramel sauce can be made ahead and stored in the fridge for up to 2 weeks or frozen for 3 months.
