  • 1 cup Gruyère cheese, grated
  • 1 cup sharp cheddar cheese, grated
  • 2 tablespoons butter (for greasing)
  • 1 teaspoon Dijon mustard
  • 2 tablespoons dry white wine (optional)
  • Salt and black pepper to taste
  • Fresh thyme or parsley for garnish

Instructions

  1. Preheat oven to 375°F (190°C). Grease a 9×13 inch baking dish with butter.
  2. Place sliced potatoes in a large bowl of cold water and soak for at least 30 minutes to remove excess starch. Drain and pat very dry with paper towels.
  3. In a large measuring cup or bowl, whisk together heavy cream, broth, minced garlic, Dijon mustard, white wine (if using), salt, and pepper.
  4. Layer 1/3 of the potatoes in the bottom of the dish, sprinkle with half the cheese. Repeat with a second layer of potatoes and remaining cheese. Finish with the final layer of potatoes.
  5. Pour the cream mixture evenly over the potatoes. Cover the dish tightly with aluminum foil.
  6. Bake covered for 45 minutes until potatoes are fork-tender.
  7. Remove foil, sprinkle any remaining cheese on top, and bake uncovered for 15-20 minutes until golden brown and bubbly.
  8. Let rest for 10 minutes before serving to allow sauce to thicken. Garnish with fresh herbs.

Notes

Uniform slicing is crucial for even cooking. Do not skip the soaking step to prevent gluey texture. Grate your own cheese to ensure smooth melting. This dish can be assembled ahead of time and refrigerated for up to 24 hours before baking; add 10-15 minutes to baking time if baking from cold. Do not freeze as the dairy sauce may separate.
