  • 1 medium yellow onion, diced
  • 4 cloves garlic, minced
  • 1 teaspoon dried oregano
  • 28 oz (800g) can crushed tomatoes
  • 1 cup (240ml) chicken broth (or vegetable broth for vegetarian)
  • 1 cup (240ml) heavy cream
  • 912 oz (250-340g) package refrigerated cheese tortellini
  • Salt and black pepper to taste
  • Optional: 2 cups fresh spinach
  • Optional: ½ teaspoon red pepper flakes
  • Optional: Fresh basil for garnish

Instructions

  1. Melt butter in a large pot over medium heat. Add diced onion and cook for 3-4 minutes until soft and translucent.
  2. Add minced garlic and dried oregano; cook for 1 minute until fragrant but not burnt.
  3. Pour in crushed tomatoes and chicken broth. Stir to combine and bring to a gentle simmer.
  4. Simmer the tomato mixture for 5-7 minutes to deepen flavors.
  5. Reduce heat to low and stir in heavy cream. Simmer gently for 2-3 minutes without boiling to prevent curdling.
  6. Season with salt and black pepper to taste.
  7. Bring soup back to a gentle boil and add refrigerated tortellini. Cook for 3-4 minutes until tortellini float and are tender.
  8. Remove from heat. If using, stir in fresh spinach to wilt.
  9. Ladle into bowls and garnish with fresh basil, red pepper flakes, or Parmesan cheese if desired.

Notes

Use refrigerated tortellini for best texture; dried tortellini requires longer cooking time and more broth. Do not boil vigorously after adding cream to prevent curdling. Soup thickens in the fridge; add broth or milk when reheating. This recipe does not freeze well due to the dairy content.
