Description

Ingredients

  • 2 medium zucchini (about 1 pound / 450g)
  • 2 large eggs
  • 23 tablespoons milk
  • 1 cup panko breadcrumbs (100g)
  • ½ cup grated parmesan cheese (50g)
  • 1 teaspoon garlic powder
  • 1 teaspoon dried oregano
  • Salt and black pepper to taste
  • Olive oil or cooking spray
  • 1 cup marinara sauce (for dipping)

Instructions

  1. Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper or a silicone mat.
  2. Wash zucchini and trim ends. Grate lengthwise into fry-sized strips (about ¼ inch thick) using a box grater.
  3. If zucchini is watery, toss with salt, let sit for 10 minutes, then pat dry thoroughly with paper towels.
  4. In a shallow bowl, whisk eggs and milk together until smooth.
  5. In a second shallow bowl, combine panko breadcrumbs, parmesan, garlic powder, oregano, salt, and pepper.
  6. Dip each zucchini stick into the egg mixture, letting excess drip off, then press firmly into the breadcrumb mixture to coat evenly.
  7. Place breaded fries on the baking sheet, ensuring they are not touching.
  8. Lightly spray or brush the fries with olive oil.
  9. Bake for 15 minutes, then flip each fry.
  10. Bake for another 5-10 minutes until breadcrumbs are golden brown and crispy.
  11. Let cool for 2 minutes before serving warm with marinara sauce.

Notes

For extra crispiness, use a wire rack to allow air circulation. Do not overcrowd the pan as this causes steaming. Pat zucchini dry thoroughly to remove moisture. For vegan version, use flax egg and nutritional yeast. For gluten-free, use GF panko.
