Ingredients
- 2 medium zucchini (about 1 pound / 450g), firm and uniform
- 1 cup freshly grated Parmesan cheese (100g)
- 1 tablespoon olive oil
- 1/2 teaspoon kosher salt (plus more for drawing out moisture)
- 1/2 teaspoon garlic powder (optional)
- 1/4 teaspoon black pepper (optional)
- 1/4 teaspoon paprika (optional)
Instructions
- Preheat oven to 400°F (200°C). Line two baking sheets with parchment paper.
- Wash zucchini and trim ends. Slice into 1/8-inch thin rounds using a sharp knife or mandoline.
- Place slices in a single layer on a kitchen towel or paper towels. Sprinkle generously with salt and let sit for 10-15 minutes to draw out moisture.
- Pat slices completely dry with fresh paper towels, squeezing gently to remove excess water.
- In a small bowl, mix grated Parmesan cheese with garlic powder, black pepper, and paprika (if using).
- Drizzle olive oil over zucchini slices and toss to coat lightly. Sprinkle cheese mixture over zucchini and press gently to adhere.
- Arrange slices in a single layer on baking sheets, ensuring they do not overlap.
- Bake for 15-20 minutes, flipping chips halfway through at the 10-minute mark.
- Remove when cheese is golden brown and bubbly. Let cool on the pan for 5 minutes to crisp up before serving.
Notes
Do not skip the salting and drying step; this is crucial for crispiness. Use freshly grated Parmesan, as pre-grated cheese contains anti-caking agents that prevent proper melting and crisping. Ensure slices are uniform in thickness and do not overlap on the pan to allow for proper air circulation. Chips are best eaten fresh but can be stored at room temperature for up to 2 days. Re-crisp in a 350°F oven if they become soft.
