  • ½ cup (113g) unsalted butter, softened
  • 45 cloves garlic, minced
  • 2 tablespoons fresh herbs (parsley and chives mix)
  • 2 tablespoons extra virgin olive oil
  • Sea salt and black pepper to taste
  • Optional: Grated Parmesan cheese, Red pepper flakes, Lemon zest

Instructions

  1. Wash potatoes thoroughly. Leave small potatoes whole or cut larger ones in half for uniform size.
  2. Fill a large pot with cold water, add 1 tablespoon salt, and bring to a boil. Add potatoes and simmer for 15-20 minutes until tender but not mushy.
  3. Drain potatoes in a colander and let them sit for 5 minutes to steam-dry.
  4. While potatoes cool, mix softened butter, minced garlic, chopped herbs, salt, and pepper in a small bowl to create the garlic herb butter.
  5. Place a boiled potato on a cutting board, drizzle with a little olive oil, and gently press down with a heavy mug or glass to flatten to about ½ inch thick.
  6. Preheat grill to medium-high heat (400°F) and oil the grates well.
  7. Place smashed potatoes flat side down on the grill. Grill for 5-7 minutes until golden brown and crispy.
  8. Flip potatoes and immediately brush generously with the garlic herb butter.
  9. Grill for another 2-3 minutes until butter is sizzling and tops are slightly charred.
  10. Serve immediately, optionally topped with extra herbs, flaky sea salt, or Parmesan.
