- 1 cup low-sodium chicken broth
- 1 cup heavy cream
- 6 cloves garlic, minced
- 1/2 cup sun-dried tomatoes, drained and chopped
- 2 cups fresh baby spinach
- 1/2 cup freshly grated parmesan cheese
- 1 teaspoon Italian seasoning
- 1/2 teaspoon salt (or to taste)
- Black pepper (to taste)
- 1/2 teaspoon red pepper flakes (optional)
- 1/2 cup shredded mozzarella cheese (optional)
Instructions
- Rinse chicken breasts and pat dry. If thick, pound to even thickness and place in the bottom of a 6-quart slow cooker.
- In a medium bowl, whisk together heavy cream, minced garlic, drained sun-dried tomatoes, Italian seasoning, salt, and pepper.
- Pour the sauce mixture over the chicken in the slow cooker, ensuring the chicken is coated.
- Cover and cook on LOW for 6-7 hours or HIGH for 3-4 hours, until chicken reaches 165°F and shreds easily.
- About 30 minutes before serving, stir in fresh spinach and grated parmesan cheese (and mozzarella if using).
- Stir gently until spinach wilts and cheese melts. If sauce is too thick, add a splash of broth or milk.
- Serve immediately over pasta, rice, or with crusty bread.
Notes
For best results, drain sun-dried tomatoes well to avoid a greasy sauce. Add spinach at the end to keep it bright green. This recipe is naturally gluten-free if you check your broth and tomato labels. It does not freeze well due to the dairy; freeze chicken and sauce separately if needed, adding fresh cream upon reheating.
