- 1.5 lbs (680g) Sirloin or Ribeye steak, cut into 1-inch cubes
- 1 tablespoon Olive Oil
- Kosher Salt and Black Pepper, to taste
- 4 tablespoons (56g) Unsalted Butter
- 6–8 cloves Garlic, minced
- 1/2 teaspoon Red Pepper Flakes (optional)
- 1 teaspoon Worcestershire Sauce
- 2 tablespoons Fresh Parsley, chopped
- 1 medium Shallot, finely diced (optional)
- 1 teaspoon Fresh Thyme (optional)
Instructions
- Pat the steak cubes thoroughly dry with paper towels and season generously with kosher salt and black pepper.
- Heat a large skillet (preferably cast iron or stainless steel) over medium-high heat for 2-3 minutes until hot.
- Add olive oil and swirl to coat. Add steak cubes in a single layer, ensuring not to overcrowd the pan. Cook undisturbed for 2 minutes to sear, then flip and cook for another 2 minutes. Remove steak from pan and set aside.
- Reduce heat to medium-low. Add butter to the same pan and let it melt and foam.
- Once foam subsides, add minced garlic and red pepper flakes. Stir constantly for 30-60 seconds until fragrant but not brown.
- If using, add shallots or thyme and cook for 1 minute. Stir in Worcestershire sauce.
- Return steak bites to the pan and toss to coat in the sauce. Cook for 1-2 minutes to finish cooking and absorb flavor.
- Remove from heat, stir in fresh parsley, and serve immediately.
Notes
Ensure the steak is patted very dry to achieve a good sear. Do not overcrowd the pan; cook in batches if necessary to prevent steaming. Watch the garlic closely as it burns easily. For best results, serve immediately as the sauce thickens upon cooling.
