  • ½ teaspoon kosher salt
  • ¼ teaspoon black pepper
  • Optional: ½ teaspoon smoked paprika

Instructions

  1. Preheat oven to 425°F (220°C).
  2. Wash potatoes thoroughly and pat completely dry with paper towels.
  3. Cut each potato in half lengthwise, then cut each half into three or four wedges (about 1 inch thick).
  4. Place wedges in a large bowl and sprinkle with cornstarch. Toss gently until every wedge is lightly dusted.
  5. Add oil, garlic powder, dried parsley, salt, and pepper to the bowl. Toss until wedges are coated and glossy.
