- 1 cup (226g) unsalted butter
- 2 cups (400g) brown sugar (light or dark)
- 1/2 cup (100g) granulated sugar
- 2 large eggs, room temperature
- 2 teaspoons vanilla extract
- 2 cups (250g) all-purpose flour
- 1 teaspoon baking powder
- 1 teaspoon salt
- 2 medium apples (approx. 300g), peeled and diced into 1/2-inch cubes
- 1 cup (240ml) caramel sauce
- 1 cup (170g) butterscotch chips
- 1/2 cup chopped pecans (optional)
Instructions
- Preheat oven to 350°F (175°C). Grease a 9×13 inch baking pan and line with parchment paper, leaving an overhang on the sides.
- Melt the butter in a microwave-safe bowl or saucepan over low heat. Let it cool slightly so it doesn’t cook the eggs.
- In a large mixing bowl, whisk the melted butter, brown sugar, and granulated sugar until smooth.
- Add eggs one at a time, whisking well after each addition. Stir in the vanilla extract.
- Add the flour, baking powder, and salt to the wet mixture. Stir gently with a spatula until just combined; do not overmix.
- Fold in the diced apples and butterscotch chips until evenly distributed.
- Spread the batter evenly into the prepared pan.
- Spoon small dollops of caramel sauce over the top of the batter, spacing them about 2 inches apart. Do not stir them in.
- Bake for 35-40 minutes, or until edges are golden brown and the center is set but slightly soft.
- Let the blondies cool in the pan for at least 30 minutes before lifting them out and slicing into squares.
Notes
Do not overbake as blondies continue to cook in the pan. Ensure apples are diced uniformly to 1/2-inch cubes. Use thick caramel sauce to prevent soggy bottoms. Store in an airtight container at room temperature for up to 3 days. Do not refrigerate.
