  • 1 wheel Brie cheese (812 oz / 250g), rind removed and cubed
  • 1/2 cup heavy cream, cold
  • 1 teaspoon vanilla extract
  • 1 teaspoon ground cinnamon
  • 2 tablespoons honey
  • 2 medium apples (Honeycrisp or Gala), cored and sliced
  • 1 cup fresh or dried cranberries
  • 1 box assorted crackers (heart or pumpkin shapes recommended)
  • 1/2 cup walnuts or pecans, chopped
  • 1 cup grapes, halved
  • 1 cup pretzels (small twists or sticks)
  • Optional: Marzipan shapes, mini marshmallows, apple butter

Instructions

  1. Remove the rind from the Brie wheel and cut the cheese into cubes. Let sit at room temperature for 30 minutes to soften.
  2. Place Brie cubes in a medium mixing bowl. Add heavy cream, vanilla extract, cinnamon, and honey.
  3. Using a hand mixer, whip the mixture on low speed, gradually increasing to medium. Whip until smooth and fluffy, forming stiff peaks (about 5-7 minutes). Do not overmix.
  4. Core and slice the apples into thin slices. Halve the grapes.
  5. Place the whipped Brie in the center of a large platter or board. Spoon or pipe into a mound.
  6. Arrange crackers around the edges of the platter.
  7. Add apple slices, cranberries, chopped nuts, grapes, and pretzels to the board. Encourage arranging them into patterns or shapes.
  8. Serve immediately with small forks or toothpicks.

Notes

Keep the bowl and beaters cold before whipping to ensure the cream holds its shape. If the whipped Brie is too thin, add more cheese or chill for 30 minutes. To prevent apples from browning, toss slices in a little lemon juice. The whipped Brie can be made up to 24 hours ahead and stored in the fridge. Assemble the board just before serving to keep crackers crisp.
