A refreshing, complex, and deeply comforting non-alcoholic drink that captures the essence of autumn with ripe pears, fresh ginger, and aromatic rosemary.

- 2 medium ripe pears (Bosc or Anjou), chopped
- 1-inch piece fresh ginger root, peeled and sliced
- 2–3 large sprigs fresh rosemary
- 1 tablespoon fresh lemon juice
- 1 cup chilled sparkling water
- Ice cubes
- 1 teaspoon honey or maple syrup (optional)
- 1 small cinnamon stick (optional, for garnish)
Instructions
- Wash the pear and cut it into small chunks. Peel the ginger root and slice it into thin coins or small pieces.
- Toss the pear chunks and ginger slices into a highball or Collins glass.
- Add the fresh rosemary sprigs on top.
- Muddle the ingredients firmly to crush the pear, bruise the ginger, and release the rosemary aroma. Add honey or maple syrup if using.
- Squeeze in the fresh lemon juice and give it a quick stir.
- Fill the glass to the top with ice.
- Slowly pour the chilled sparkling water over the ice to preserve carbonation.
- Give one final gentle stir.
- Slap a fresh sprig of rosemary between your palms to release oils and place it in the drink as garnish.
- Serve immediately.
Notes
Chill glasses in the freezer for 15 minutes before serving. You can prep the muddled pear, ginger, and rosemary mixture ahead of time and store in the fridge for up to 24 hours; add ice and sparkling water right before serving. Slapping the rosemary releases essential oils for better aroma.
