- 1/2 cup plain Greek yogurt
- 1 teaspoon pumpkin pie spice
- 1 tablespoon maple syrup or honey
- Pinch of salt
- Optional: Walnuts, pecans, or chia seeds
Instructions
- Divide the oats, pumpkin pie spice, salt, and any optional add-ins (nuts/seeds) evenly between 2-3 mason jars or containers.
- Pour the milk and Greek yogurt into each jar.
- Add the pumpkin puree and maple syrup or honey to each jar.
- Stir the ingredients thoroughly until the pumpkin and spices are evenly distributed. Adjust consistency with more milk or oats if needed.
- Seal the jars and refrigerate for at least 4 hours, preferably overnight, to allow the oats to soften.
- In the morning, stir well. Eat cold or microwave for 60-90 seconds until warm. Top with extra nuts or syrup if desired.
Notes
Use old-fashioned rolled oats for better texture; avoid instant oats. Ensure you use 100% pumpkin puree, not pumpkin pie filling. Freeze leftover pumpkin puree in ice cube trays for future use. The oats will thicken in the fridge, so do not make the mixture too runny initially.
