Instructions
- Preheat oven to 400°F (200°C). Line a large rimmed baking sheet with parchment paper.
- In a large mixing bowl, whisk together olive oil, maple syrup, Dijon mustard, minced garlic, salt, and pepper to create a smooth sauce.
- Pat chicken thighs dry with a paper towel. Add chicken and Brussels sprouts to the bowl and toss until evenly coated in the sauce.
- Arrange chicken and vegetables in a single layer on the baking sheet, ensuring they are not crowded to allow for proper roasting.
- Roast for 20 minutes. Remove pan and flip the chicken thighs.
- Return to oven and roast for another 5-10 minutes, or until chicken reaches an internal temperature of 165°F and Brussels sprouts are crispy and browned.
- Remove from oven and let chicken rest for 5 minutes before serving.
- Garnish with fresh thyme or red pepper flakes if desired.
