A quick, no-cook dessert made by pouring cold spiced apple cider over vanilla bean ice cream, creating a frothy, aromatic treat that tastes like autumn.

- 12 oz (355ml) spiced apple cider
- 2–3 scoops (about ½ cup) vanilla bean ice cream
- 1 cinnamon stick (optional garnish)
- Whipped cream (optional garnish)
- 1 tablespoon chopped pecans or walnuts (optional garnish)
- Pinch of freshly grated nutmeg (optional garnish)
Instructions
- Optional: Chill tall glasses or mugs in the freezer for 10 minutes before serving.
- Remove vanilla bean ice cream from the freezer and let it soften on the counter for 2-3 minutes.
- Scoop 2-3 generous scoops of ice cream into the chilled glass without pressing down.
- Slowly pour the cold spiced apple cider over the ice cream, filling the glass about ¾ full to allow room for foam.
- Gently stir the mixture with a long spoon or cinnamon stick until the ice cream is mostly melted but retains some soft-serve texture.
- Garnish with a cinnamon stick, whipped cream, chopped nuts, or nutmeg.
- Serve immediately while cold and frothy.
Notes
For best results, use fridge-cold cider and high-fat vanilla bean ice cream. If using plain apple cider, add a cinnamon stick and pinch of cloves. For an adult version, add a splash of bourbon or rum. Do not store the assembled float as the ice cream will melt and separate.
