Fluffy Buttermilk Blueberry Pancakes with Lemon Zest

  • Author: Thea
  • Total Time: 20 minutes
  • Yield: 8-10 servings 1x

Description

These homemade buttermilk blueberry pancakes are light, airy, and infused with bright lemon zest. A beginner-friendly recipe that uses simple pantry staples to create fluffy, golden pancakes better than any box mix.

Ingredients

Scale
  • 1 ½ cups all-purpose flour
  • 2 tablespoons granulated sugar
  • 2 teaspoons baking powder
  • ½ teaspoon baking soda
  • ½ teaspoon salt
  • 1 ¼ cups buttermilk (or substitute with milk and vinegar)
  • 2 large eggs, room temperature
  • 3 tablespoons unsalted butter, melted
  • 1 teaspoon vanilla extract
  • 1 medium lemon, zested
  • 1 cup fresh blueberries (or frozen, not thawed)

Instructions

  1. In a large bowl, whisk together the flour, sugar, baking powder, baking soda, and salt until well combined.
  2. In a separate medium bowl, whisk the buttermilk, eggs, melted butter, vanilla extract, and lemon zest until smooth.
  3. Pour the wet mixture into the dry mixture. Stir gently just until the flour disappears; the batter should remain lumpy. Do not overmix.
  4. Gently fold the blueberries into the batter.
  5. Preheat a non-stick skillet or griddle over medium-low heat. Test readiness by sprinkling water drops; they should sizzle and evaporate.
  6. Lightly grease the pan with butter or oil.
  7. Pour about ¼ cup of batter onto the skillet for each pancake. Cook until bubbles form on the surface and pop, and edges look set (about 2-3 minutes).
  8. Flip carefully and cook the other side for 1-2 minutes until golden brown.
  9. Serve immediately with maple syrup and butter, or keep warm in a 200°F oven.

Notes

Do not overmix the batter; lumps are necessary for fluffy pancakes. If using frozen blueberries, do not thaw them first to prevent bleeding color. Keep heat at medium-low to ensure even cooking without burning. For best results, use fresh baking powder.
