  • 1/4 teaspoon black pepper
  • 1/4 teaspoon red pepper flakes (optional)

Instructions

  1. Preheat oven to 350°F (175°C).
  2. Cook the sausage in a skillet over medium heat until browned and cooked through. Drain excess fat.
  3. If adding onions, bell peppers, or spinach, sauté them in the same skillet with the sausage until soft. Set aside to cool slightly.
  4. In a large mixing bowl, crack the eggs and add the milk, salt, and pepper. Whisk vigorously for 30-60 seconds until frothy.
  5. Add the cooked sausage and vegetables to the egg mixture. Stir gently.
  6. Fold in the shredded cheese carefully to avoid overmixing.
  7. Lightly grease a 12-cup muffin tin with cooking spray or butter.
  8. Divide the mixture evenly among the 12 cups, filling each about 3/4 full.
