Description

A refreshing, tart, and sweet summer drink made with fresh raspberries, mint, and lemon juice. This easy recipe uses a homemade syrup for authentic fruit flavor without fancy equipment.


Ingredients

  • 2 cups fresh or frozen raspberries
  • 1 cup granulated sugar
  • 1 cup water (for syrup)
  • 1 large bunch fresh mint leaves (about 1 cup packed)
  • 1 cup freshly squeezed lemon juice (from 68 lemons)
  • 1.5 to 2 cups cold water (for dilution)
  • Ice
  • Extra raspberries and mint sprigs for garnish

Instructions

  1. In a medium saucepan, combine raspberries, sugar, and 1 cup of water. Stir until sugar is mostly dissolved.
  2. Place over medium-high heat and bring to a boil, then reduce heat to low and simmer for 5 minutes until berries burst.
  3. Roughly chop the mint leaves. Turn off the heat and add the mint to the hot syrup. Cover and let steep for 10 minutes.
  4. Strain the mixture through a fine-mesh strainer into a bowl, pressing on the berries to extract juice. Discard seeds and pulp.
  5. Squeeze lemons to get 1 cup of juice, straining to remove seeds.
  6. In a large pitcher, combine the raspberry mint syrup, lemon juice, and 1.5 cups of cold water. Stir well.
  7. Taste and adjust sweetness or tartness by adding more sugar, lemon juice, or water as needed.
  8. Refrigerate for at least 30 minutes to chill.
  9. Serve over ice, garnished with fresh raspberries and mint sprigs.

Notes

For a sparkling version, replace half the water with sparkling water or club soda before serving. To avoid dilution, freeze some of the syrup into ice cubes. The mint should be steeped off the heat to prevent bitterness. Store leftover syrup in the fridge for up to 5 days.
