Description
A creamy, tangy, and sweet no-bake strawberry cheesecake with a graham cracker crust. This dessert requires no oven, uses real fruit, and is perfect for impressing guests with minimal stress.

- 1 ½ cups (150g) graham cracker crumbs
- 6 tablespoons (85g) unsalted butter, melted
- 2 tablespoons (25g) granulated sugar
- Pinch of salt
- 24 oz (680g) full-fat cream cheese, softened
- 1 cup (200g) granulated sugar
- 1 cup (240ml) heavy cream, cold
- 2 teaspoons vanilla extract
- 1 tablespoon (8g) confectioners’ sugar
- 1 ½ pounds (680g) fresh strawberries, washed and hulled
- ¼ cup (60g) strawberry jam or preserves
- 1 tablespoon water
Instructions
- Crush graham crackers into fine crumbs. In a medium bowl, mix crumbs with melted butter, 2 tablespoons sugar, and a pinch of salt until it resembles wet sand.
- Press the crust mixture firmly into the bottom of a 9-inch springform pan. Place in the fridge to set while making the filling.
- In a large mixing bowl, beat softened cream cheese and 1 cup sugar on medium speed until smooth and creamy. Scrape down sides and beat for another minute.
- Add vanilla extract and confectioners’ sugar to the cream cheese mixture and mix until combined.
- In a separate cold bowl, whip heavy cream on high speed until stiff peaks form.
- Lighten the cream cheese mixture by stirring in one-third of the whipped cream. Gently fold in the remaining whipped cream using a spatula until uniform and fluffy.
- Fold in 1 ½ cups of diced strawberries into the cheesecake mixture.
- Pour the filling into the prepared crust and smooth the top. Arrange remaining fresh strawberries on top in a pattern.
- Cover loosely with plastic wrap or foil and refrigerate for at least 4 hours, ideally overnight, until set.
- Just before serving, mix strawberry jam with 1 tablespoon water and microwave until runny. Brush glaze over the strawberries.
- Release the springform pan sides and slice with a clean, sharp knife.
Notes
Ensure cream cheese is completely softened to avoid lumps. Do not skip the chilling time as the cheesecake needs at least 4 hours to set properly. For clean slices, dip the knife in hot water and wipe dry between cuts. The recipe can be made gluten-free by using gluten-free graham crackers.
