  • 6 tablespoons (85g) unsalted butter, melted
  • 2 tablespoons (25g) granulated sugar
  • Pinch of salt
  • 24 oz (680g) full-fat cream cheese, softened
  • 1 cup (200g) granulated sugar
  • 1 cup (240ml) heavy cream, cold
  • 2 teaspoons vanilla extract
  • 1 tablespoon (8g) confectioners’ sugar
  • 1 ½ pounds (680g) fresh strawberries, washed and hulled
  • ¼ cup (60g) strawberry jam or preserves
  • 1 tablespoon water

Instructions

  1. Crush graham crackers into fine crumbs. In a medium bowl, mix crumbs with melted butter, 2 tablespoons sugar, and a pinch of salt until it resembles wet sand.
  2. Press the crust mixture firmly into the bottom of a 9-inch springform pan. Place in the fridge to set while making the filling.
  3. In a large mixing bowl, beat softened cream cheese and 1 cup sugar on medium speed until smooth and creamy. Scrape down sides and beat for another minute.
  4. Add vanilla extract and confectioners’ sugar to the cream cheese mixture and mix until combined.
  5. In a separate cold bowl, whip heavy cream on high speed until stiff peaks form.
  6. Lighten the cream cheese mixture by stirring in one-third of the whipped cream. Gently fold in the remaining whipped cream using a spatula until uniform and fluffy.
  7. Fold in 1 ½ cups of diced strawberries into the cheesecake mixture.
  8. Pour the filling into the prepared crust and smooth the top. Arrange remaining fresh strawberries on top in a pattern.
  9. Cover loosely with plastic wrap or foil and refrigerate for at least 4 hours, ideally overnight, until set.
  10. Just before serving, mix strawberry jam with 1 tablespoon water and microwave until runny. Brush glaze over the strawberries.
  11. Release the springform pan sides and slice with a clean, sharp knife.

Notes

Ensure cream cheese is completely softened to avoid lumps. Do not skip the chilling time as the cheesecake needs at least 4 hours to set properly. For clean slices, dip the knife in hot water and wipe dry between cuts. The recipe can be made gluten-free by using gluten-free graham crackers.
