Description

  • 2 medium zucchini (about 600g / 1.3 lbs)
  • ½ cup (60g) Gluten-Free All-Purpose Flour (with xanthan gum)
  • 2 large eggs
  • 3 cloves garlic, minced
  • ¼ cup fresh herbs (parsley, dill, and chives)
  • ¼ cup (25g) shredded Parmesan cheese
  • 1 teaspoon kosher salt (plus more to taste)
  • Black pepper to taste
  • 2 tablespoons olive oil or avocado oil (for frying)
  • 1 cup (240g) Greek Yogurt (for dip)
  • 1 tablespoon lemon juice (for dip)
  • 1 clove garlic, grated or minced (for dip)
  • 1 teaspoon dried dill (for dip)

Instructions

  1. Wash zucchini and trim ends. Grate using the large holes of a box grater into a large bowl.
  2. Place shredded zucchini in a clean kitchen towel or cheesecloth. Gather corners and twist tightly over the sink to squeeze out as much liquid as possible. The zucchini should be barely damp.
  3. Transfer squeezed zucchini to a mixing bowl. Add gluten-free flour, eggs, minced garlic, Parmesan, salt, pepper, and fresh herbs. Stir gently to combine.
  4. Let the batter sit for 5 minutes to allow the flour to hydrate and bind.
  5. Heat a large skillet over medium-high heat with 2 tablespoons of oil until shimmering.
  6. Drop mounds of the zucchini mixture into the hot oil, flattening slightly to form patties. Do not overcrowd the pan.
  7. Fry for 3-4 minutes on the first side until golden brown and crispy. Flip and cook for another 2-3 minutes on the other side.
  8. Transfer cooked fritters to a plate lined with paper towels to drain excess oil. Keep warm in a 200°F oven while cooking remaining batches.
  9. While fritters cook, whisk together Greek yogurt, lemon juice, grated garlic, dried dill, salt, and pepper to make the dip.
  10. Serve fritters immediately with the garlic herb yogurt dip.

Notes

Squeezing the water out of the zucchini is the most critical step to ensure crispiness. If your gluten-free flour blend does not contain xanthan gum, add ½ teaspoon to help bind the fritters. Let the batter rest for 5 minutes before frying to allow the flour to absorb moisture. For a lighter option, bake at 400°F for 15-20 minutes, flipping halfway, though they will be less crispy than pan-fried.
