- 1 pound ground beef (80/20 fat ratio)
- 1 large yellow onion, diced
- 4 cloves garlic, minced
- 2 pounds waxy potatoes (Yukon Gold or red), cut into ½-inch cubes
- 4 cups chicken broth (low-sodium)
- 1 cup heavy cream
- 2 cups sharp cheddar cheese, shredded
- 1 tablespoon yellow mustard or Dijon
- 1 teaspoon Worcestershire sauce
- ½ cup dill pickles, chopped
- 2 tablespoons butter
- 1 teaspoon salt (plus more to taste)
- 1 teaspoon garlic powder
- ½ teaspoon dried thyme
- Black pepper to taste
Instructions
- Prep ingredients: Dice onion, mince garlic, cube potatoes, and grate cheese.
- Brown the ground beef in a large skillet over medium-high heat for 5-7 minutes until no pink remains. Drain excess fat, leaving about 1 tablespoon.
- In the same skillet or pot, melt butter over medium heat. Sauté onions for 3-4 minutes until soft and translucent.
- Add minced garlic and cook for 1 minute until fragrant.
- Return beef to the pot with onions. Add chicken broth, potatoes, garlic powder, thyme, salt, and pepper.
- Bring to a boil, then reduce heat to medium-low and simmer for 15 minutes until potatoes are tender.
- Reduce heat to low. Stir in heavy cream and mustard; simmer gently for 2 minutes (do not boil).
- Gradually stir in shredded cheese until fully melted and smooth.
- Stir in chopped pickles and Worcestershire sauce. Taste and adjust seasoning.
- Serve immediately, topped with extra cheese, bacon bits, or chives if desired.
Notes
Grate your own cheese to prevent anti-caking agents from affecting texture. Add cheese off the heat to avoid graininess. This soup tastes better the next day as flavors meld. It does not freeze well due to the dairy content. For a lighter version, swap beef for turkey and potatoes for cauliflower.
