- 1 large ripe pineapple (about 3–4 pounds / 1.5 kg), peeled and cut into 1-inch thick rings or chunks

- 1 tablespoon lemon juice

Instructions
- Prep the pineapple: Peel the pineapple, remove the eyes, and cut into 1-inch thick rings or chunks.
- Make the glaze: In a small bowl, whisk together softened butter, honey, cinnamon, sea salt, lemon juice, and vanilla until smooth.
- Heat the grill: Preheat a gas or charcoal grill to medium-high heat (400-450°F / 200-230°C).
- Oil the grates: Dip a paper towel in neutral oil and rub it thoroughly over the clean grill grates to prevent sticking.
- Grill the pineapple: Place pineapple pieces on the oiled grates. Cook for 3-4 minutes without moving them to allow grill marks to form.
- Flip and glaze: Flip the pineapple. Brush the top side with the cinnamon-honey glaze. Close the lid and cook for another 3-4 minutes.
- Finish grilling: Flip again, brush the other side with remaining glaze, and cook for 1-2 more minutes until tender but not mushy.
- Serve: Remove from grill, drizzle with extra glaze, and serve immediately with vanilla ice cream, whipped cream, toasted coconut, or mint.
Notes
Ensure the pineapple is ripe and smells sweet at the base for best caramelization. Oil the grill grates thoroughly to prevent the sugary fruit from sticking. If the grill is too hot, move pineapple to indirect heat to prevent burning the honey. Let the pineapple rest for 2 minutes after grilling to allow the glaze to set.
