Description
A quick, one-pan weeknight dinner featuring savory ground turkey, tender sweet potatoes, and a spiced marinara sauce. It’s hearty, flavorful, and ready in just 30 minutes.
Ingredients
Scale
- 1.5 pounds ground turkey (93% lean)
- 2 medium sweet potatoes, peeled and diced into ½-inch cubes
- 1 medium yellow onion, diced
- 4 cloves garlic, minced
- 2 tablespoons olive oil
- 1 jar (24oz) marinara sauce (no sugar added)
- ½ cup chicken broth (low-sodium)
- 1 teaspoon cumin
- 1 teaspoon chili powder
- ½ teaspoon smoked paprika
- Salt and black pepper to taste
- ¼ cup fresh cilantro, chopped (optional)
- Lime wedges for serving (optional)
- Shredded cheese (Monterey Jack or cheddar, optional)
- Sour cream (optional)
Instructions
- Prep ingredients: Peel and dice sweet potatoes into ½-inch cubes, dice the onion, and mince the garlic. Set spices aside in a small bowl.
- Heat olive oil in a large cast-iron skillet or Dutch oven over medium-high heat.
- Add diced onions and cook for 2-3 minutes until softened and translucent. Add minced garlic and cook for 1 more minute until fragrant.
- Add ground turkey to the skillet. Break it up with a wooden spoon and cook for 5-7 minutes until browned and no longer pink. Drain excess liquid if necessary.
- Add diced sweet potatoes to the skillet. Sprinkle with cumin, chili powder, smoked paprika, salt, and black pepper. Stir well to coat.
- Pour in marinara sauce and chicken broth. Stir to combine and bring to a simmer.
- Reduce heat to medium-low, cover with a lid, and simmer for 15-20 minutes until sweet potatoes are tender. If sauce is too thick, add a splash of broth; if too thin, remove lid for the last 5 minutes to reduce.
- Remove from heat. Taste and adjust seasoning. Stir in fresh cilantro.
- Serve immediately with lime wedges, and optional toppings like cheese, sour cream, or crusty bread.
Notes
Cut sweet potatoes uniformly for even cooking. Let the turkey brown properly to build flavor. Finish with lime juice to brighten the dish. Can be made vegetarian by swapping turkey for lentils or black beans. Freezes well for up to 3 months.
