  • ½ cup plain Greek yogurt (full-fat or 2%)
  • 1 cup red seedless grapes, halved
  • ½ cup walnuts, chopped
  • 2 tablespoons red onion, finely diced
  • 1 stalk celery, diced
  • 1 tablespoon fresh lemon juice
  • 1 tablespoon extra virgin olive oil
  • 1 teaspoon Dijon mustard
  • ½ teaspoon garlic powder
  • 1 teaspoon dried dill
  • Salt and black pepper to taste

Instructions

  1. Shred the rotisserie chicken into bite-sized pieces using two forks, discarding skin and bones.
  2. Wash and pat dry the grapes, then slice them in half. Dice the celery and finely mince the red onion.
  3. In a large mixing bowl, whisk together the Greek yogurt, lemon juice, olive oil, Dijon mustard, garlic powder, dried dill, salt, and pepper until smooth.
  4. Add the shredded chicken, halved grapes, diced celery, and chopped walnuts to the bowl with the dressing.
  5. Gently fold everything together with a spatula until the chicken and grapes are evenly coated.
  6. Cover and refrigerate for at least 30 minutes to let flavors meld, or serve immediately.

Notes
