Instructions
- Preheat oven to 400°F (200°C). Line a large rimmed baking sheet with parchment paper.
- In a medium bowl, whisk together balsamic vinegar, honey, minced garlic, olive oil, Dijon mustard, salt, and pepper until smooth.
- Add chicken thighs to the bowl and toss to coat evenly in the glaze.
- Arrange chicken thighs in a single layer on the prepared baking sheet, ensuring they are not touching. Pour any remaining glaze over the chicken.
- Bake for 20 minutes.
- Remove from oven, flip each thigh, and pour any pan juices over the top.
- Return to oven and bake for another 10-15 minutes, or until internal temperature reaches 165°F (74°C) and edges are crispy.
- Optional: Broil for the last 2 minutes for extra caramelization, watching closely to prevent burning.
- Remove from oven and let rest for 5 minutes before serving.
- Garnish with fresh herbs if desired and serve immediately.

Do not crowd the chicken on the pan to ensure proper roasting and crisping. If using bone-in thighs, add 10-15 minutes to the cook time. The pan juices can be saved and used as a sauce for rice or potatoes. For a spicy variation, add red pepper flakes to the glaze.
