Keto Chocolate Chip Cookie Dough Bites: Easy No-Bake Recipe

  • Author: Thea
  • Total Time: 10 minutes
  • Yield: 20 servings 1x

Description

These keto chocolate chip cookie dough bites are a safe, no-bake treat that satisfies sweet cravings without the guilt. Made with simple pantry ingredients like almond flour and erythritol, they offer a chewy, dough-like texture that is safe to eat raw and ready in just 10 minutes.

Ingredients

Scale
  • 2 cups (200g) blanched almond flour
  • ½ cup (113g) unsalted butter, softened to room temperature
  • 2 tablespoons creamy almond butter
  • 1 teaspoon pure vanilla extract
  • ½ teaspoon sea salt
  • ½ cup (50g) granulated erythritol or monk fruit sweetener
  • 1 tablespoon psyllium husk powder
  • ½ cup (85g) keto chocolate chips (e.g., Lily’s or Ghirardelli 86% dark)
  • Mini chocolate chips (optional)

Instructions

  1. Ensure butter is softened to room temperature. If cold, microwave for 10-15 seconds until soft but not melted.
  2. In a medium mixing bowl, combine softened butter, almond butter, vanilla extract, and sea salt. Mix until smooth and creamy with no streaks of butter remaining.
  3. Add almond flour, psyllium husk powder, and sweetener to the wet ingredients. Stir until combined; the mixture will initially look crumbly but will bind together as the psyllium absorbs moisture.
  4. Fold in the chocolate chips using a spatula, distributing them evenly without crushing them. If the dough is too dry, add a tablespoon of almond butter or splash of almond milk. If too wet, add a sprinkle of almond flour.
  5. Line a baking sheet or plate with parchment paper. Scoop out portions of dough (about 1 tablespoon each) and roll into balls.
  6. Place the dough balls on the lined sheet and freeze for 10 minutes to firm up.
  7. Serve immediately for a cold, ice-cream-like texture, or store in an airtight container.

Notes

Use blanched almond flour (skinless) for a smooth texture, not almond meal. Room temperature butter is crucial for a creamy dough. Psyllium husk powder provides the chewy texture; do not skip it. These bites are safe to eat raw as they contain no eggs or raw flour. For best results, chill before eating to enhance flavor and texture.
