  • 4 large eggs
  • 4 ounces (113g) full-fat block cream cheese, softened
  • 2 tablespoons (30ml) heavy cream
  • 4 strips thick-cut bacon, cooked crispy and crumbled
  • 1 cup fresh spinach, chopped
  • ½ cup (50g) shredded sharp cheddar or Mexican blend cheese
  • ½ teaspoon salt
  • ¼ teaspoon black pepper

Instructions

  1. Preheat oven to 325°F (165°C).
  2. Cook bacon in a skillet until crispy, drain on paper towels, and crumble into small pieces. Roughly chop the spinach.
  3. In a blender, combine softened cream cheese, eggs, heavy cream, salt, and pepper. Blend on high for 30-45 seconds until completely smooth with no lumps.
  4. Pour the batter into a bowl and gently fold in the crumbled bacon, chopped spinach, and shredded cheese.
  5. Place silicone muffin cups in a standard muffin tin (or grease a metal tin well). Pour the batter into each cup, filling them about ¾ full.
  6. Bake for 25-30 minutes until the tops are lightly golden and the centers are set but still have a slight jiggle.
  7. Let cool in the tin for 5 minutes, then gently pop out of the cups. Serve warm or cold.

Notes

Ensure cream cheese is fully softened and blended smooth to avoid lumps. Drain bacon and spinach well to prevent soggy bites. Do not overbake or they will become rubbery. For meal prep, cool completely before storing in an airtight container in the fridge for up to 5 days. Can be frozen for up to 3 months.
