Description

These quick and easy grilled shrimp skewers feature a sweet and tangy honey lime marinade. Perfect for busy weeknights, they cook in just 20 minutes and require minimal cleanup.


Ingredients

  • 1.5 pounds large shrimp, peeled and deveined
  • ½ cup honey
  • ¼ cup fresh lime juice
  • 4 cloves garlic, minced
  • 2 tablespoons soy sauce (or tamari for gluten-free)
  • 2 tablespoons olive oil
  • ½ teaspoon red pepper flakes (optional)
  • 810 wooden skewers
  • Optional: Pineapple chunks or bell peppers

Instructions

  1. Soak wooden skewers in a bowl of water for 15-20 minutes to prevent burning.
  2. In a medium bowl, whisk together honey, fresh lime juice, minced garlic, soy sauce, olive oil, and red pepper flakes until smooth.
  3. Add the shrimp to the marinade, tossing gently to coat. Cover and refrigerate for 15-30 minutes (do not exceed 30 minutes to avoid mushy texture).
  4. Preheat grill to medium-high heat (approx. 400°F) or heat a grill pan/cast iron skillet over medium-high heat. Oil the grates lightly.
  5. Thread 3-4 shrimp onto each soaked skewer, laying them in a line. Add optional vegetables if desired.
  6. Place skewers on the grill and cook for 2-3 minutes per side, until opaque, pink, and charred. Avoid overcooking.
  7. Remove from grill and serve immediately, optionally squeezing fresh lime over the top.

Notes

Pat shrimp dry before marinating to ensure good sear. Do not over-marinate as the acid can cook the shrimp. If using frozen shrimp, thaw completely in cold water and pat dry. Reserve extra marinade before adding shrimp if you wish to use it as a dipping sauce (boil first if it touched raw shrimp).
