Description

A no-bake, creamy fruit salad featuring strawberries, blueberries, and raspberries folded into a whipped cream cheese mixture with graham cracker crumbs. This patriotic dessert is refreshing, easy to make, and perfect for summer gatherings.


Ingredients

  • 8 oz (225g) full-fat cream cheese, softened
  • 1 cup (240ml) heavy cream, cold
  • 1 teaspoon pure vanilla extract
  • ¼ cup (50g) granulated sugar
  • 1 pint (450g) fresh strawberries, hulled and diced
  • 2 cups (300g) fresh blueberries, rinsed and dried
  • 1 cup (150g) fresh raspberries (optional)
  • 1 cup (100g) graham cracker crumbs
  • 2 tablespoons melted butter
  • ¼ cup white chocolate chips (optional)

Instructions

  1. Wash, hull, and dice strawberries into small cubes. Rinse and thoroughly dry blueberries and raspberries with paper towels to remove excess moisture. Set fruit aside in separate bowls.
  2. In a large mixing bowl, beat the softened cream cheese, sugar, and vanilla extract on medium-high speed until smooth and creamy (2-3 minutes). Scrape down the sides of the bowl.
  3. In a separate cold bowl, whip the heavy cream until stiff peaks form. Gently fold the whipped cream into the cream cheese mixture using a spatula to maintain airiness.
  4. Stir in half of the graham cracker crumbs into the cream mixture. If using white chocolate chips, fold them in now.
  5. Gently fold in the diced strawberries and blueberries. Add raspberries last if using, being careful not to crush the fruit.
  6. Transfer the mixture to a serving dish (such as a glass trifle bowl). Smooth the top and sprinkle the remaining graham cracker crumbs over the surface. Garnish with reserved berries if desired.
  7. Cover and refrigerate for at least one hour, or ideally overnight, to allow flavors to meld and the salad to set.

Notes

Ensure all fruit is completely dry before adding to prevent the cream from becoming watery. Use room temperature cream cheese for a smooth texture without lumps. Keep the bowl and beaters cold when whipping the heavy cream to ensure stiff peaks. This salad improves in flavor when made ahead and refrigerated overnight.
