Description
These slow cooker BBQ pulled chicken sliders are the perfect crowd-pleasing dish for summer cookouts and lazy days. With just 15 minutes of prep, tender saucy chicken is slow-cooked to perfection and served on toasted Hawaiian rolls with a crunchy coleslaw topping.
Ingredients
- 3–4 pounds boneless, skinless chicken breasts
- 2 cups sweet and smoky BBQ sauce
- 1/2 cup low-sodium chicken broth
- 1 large yellow onion, sliced into thick half-moons
- 4 cloves garlic, minced
- 4 tablespoons unsalted butter
- 1 package (12-15 rolls) Hawaiian rolls
- 1 bag (16 oz) coleslaw mix
- 1/2 cup full-fat mayonnaise
- 1 tablespoon apple cider vinegar
- 1 teaspoon smoked paprika (optional)
- 1/2 teaspoon cayenne pepper (optional)
Instructions
- Slice the onion into thick half-moons and mince the garlic.
- Place the chicken breasts in the bottom of a 6-quart slow cooker.
- Lay the sliced onion on top of the chicken to create a bed.
- Pour the BBQ sauce over the chicken and add the chicken broth.
- Sprinkle in optional dry spices like smoked paprika or cayenne.
- Cover and cook on low for 6-8 hours until chicken reaches 165°F and shreds easily.
- Remove chicken from slow cooker and shred using two forks.
- Stir shredded chicken with about 1/2 cup of the cooking liquid from the slow cooker.
- Melt butter in a large skillet over medium heat.
- Cut Hawaiian rolls in half horizontally and toast cut sides in butter until golden brown (2-3 minutes).
- Mix coleslaw mix with mayonnaise and apple cider vinegar.
- Assemble sliders by placing shredded chicken on the bottom bun, topping with coleslaw, and adding the top bun.
Notes
Toast the buns to prevent sogginess. The pulled chicken freezes well for up to 3 months. Do not freeze assembled sliders. For a spicy version, add jalapeños and cayenne. For a honey garlic version, swap BBQ sauce for honey garlic sauce with soy sauce.
