A simple, beginner-proof recipe for loaded cheesy nachos with ground beef and jalapeños. This one-pan meal is ready in about 15 minutes and tastes better than takeout.

- 1 pound ground beef (80/20 fat ratio)
- 1 large bag sturdy tortilla chips (12–14 oz)
- 2 cups shredded cheddar cheese
- 2 medium jalapeños, sliced (or ½ cup pickled slices)
- 1 can (15 oz) black beans, drained and rinsed
- Salt and pepper to taste
- Optional toppings: Sour cream, guacamole, salsa, chopped cilantro, green onions
Instructions
- Preheat oven to 375°F (190°C). Line a baking sheet with parchment paper.
- Heat a large skillet over medium-high heat. Add ground beef and break it up into small crumbles. Cook until browned all the way through, about 5-7 minutes. Season with salt and pepper. Set aside.
- Pour tortilla chips onto the prepared baking sheet in a single layer.
- Spread the browned beef evenly over the chips. Scatter the drained black beans over the beef if using.
- Sprinkle the shredded cheese generously over everything. Sprinkle half of the jalapeños on top.
- Bake for 5-8 minutes until the cheese is completely melted and bubbling.
- Remove from oven and top with remaining fresh jalapeños and optional toppings like sour cream or salsa.
- Serve immediately while hot and crispy.
Notes
Use sturdy, thick-cut tortilla chips to prevent sogginess. Drain beans well and pat dry to maintain texture. Do not microwave leftovers as it makes chips chewy; reheat in the oven at 350°F for 5-10 minutes. For a lighter version, use lean beef and less cheese.
