Description

A keto-friendly twist on the classic Philly cheesesteak, featuring juicy ribeye beef, melted provolone and American cheese, and sautéed peppers stuffed into tender bell pepper shells.


Ingredients

  • 1.5 lbs ribeye steak, sliced thin
  • 1 large yellow onion, diced
  • 1 cup bell peppers (green and red mix), diced
  • 4 cloves garlic, minced
  • 1 cup provolone cheese, shredded
  • 34 slices American cheese
  • 1 tsp kosher salt
  • 1/2 tsp black pepper
  • 4 large bell peppers (any color), tops cut off and seeds removed
  • 1 tbsp olive oil
  • 2 tbsp fresh parsley, chopped (optional)
  • Hot sauce (optional)

Instructions

  1. Preheat oven to 375°F (190°C).
  2. Slice tops off large bell peppers and remove seeds and membranes. Place upright in a 9×13 inch baking dish.
  3. Heat olive oil in a large skillet over medium-high heat. Add diced onions and diced bell peppers; cook for 3-4 minutes until soft.
  4. Push veggies to the side. Add sliced beef to the pan and sear for 1 minute without stirring, then chop and stir until browned. Drain excess liquid if necessary.
  5. Add minced garlic and cook for 30 seconds. Season with salt and pepper.
  6. Remove from heat and stir in half of the shredded provolone cheese.
  7. Stuff each pepper shell generously with the beef mixture.
  8. Top each stuffed pepper with remaining provolone cheese and American cheese slices.
  9. Bake for 20-25 minutes until cheese is bubbly and peppers are tender.
  10. Optional: Broil for 1-2 minutes for extra browning.
  11. Let rest for 5 minutes before serving. Garnish with parsley if desired.

Notes

Freeze beef for 20 minutes before slicing for easier thin cuts. Do not skip American cheese as it helps emulsify the melt. If peppers are too hard, cover with foil for the first 15 minutes of baking. Do not freeze these as peppers become watery upon thawing.
