  • 2 pounds boneless, skinless chicken breasts, cut into 1-inch cubes
  • 1/4 cup extra virgin olive oil
  • 3 tablespoons fresh lemon juice
  • 1 teaspoon lemon zest
  • 4 cloves garlic, minced
  • 1 tablespoon dried oregano
  • 1 teaspoon kosher salt
  • 1/2 teaspoon black pepper
  • 2 cups full-fat Greek yogurt
  • 1 large English cucumber, grated
  • 1 clove garlic, minced
  • 1 tablespoon fresh lemon juice
  • 1 tablespoon olive oil
  • 1 tablespoon fresh dill, chopped
  • 1/2 teaspoon salt
  • Bamboo or metal skewers (soaked if using wood)

Instructions

  1. Cut chicken breasts into uniform 1-inch cubes and place in a large bowl.
  2. In a small bowl, whisk together olive oil, lemon juice, lemon zest, minced garlic, oregano, salt, and pepper to create the marinade.
  3. Pour the marinade over the chicken and toss to coat evenly. Cover and refrigerate for at least 30 minutes (or up to 24 hours).
  4. While the chicken marinates, grate the cucumber and squeeze out excess water using a clean kitchen towel or cheesecloth.
  5. In a small bowl, combine the Greek yogurt, squeezed cucumber, minced garlic, lemon juice, olive oil, fresh dill, and salt. Stir well and refrigerate until serving.
  6. Preheat grill to medium-high heat (400°F / 200°C) and oil the grates thoroughly.
  7. Thread the marinated chicken onto skewers, leaving small spaces between pieces.
  8. Grill skewers for 5 minutes, flip, and cook for another 5-7 minutes until internal temperature reaches 165°F.
  9. Let skewers rest for 2-3 minutes before serving with tzatziki on the side.

Notes

Ensure the cucumber is thoroughly squeezed to prevent watery tzatziki. Do not overcrowd the grill to ensure proper charring. Chicken can be eaten cold or reheated gently. Tzatziki is best served cold.
