A right-sized recipe for two featuring juicy chicken skewers marinated in lemon, oregano, and garlic, served with a fresh, creamy homemade tzatziki sauce. Designed to eliminate leftovers and stress.

- 2 large boneless/skinless chicken breasts (about 1.2 lbs / 550g)
- 3 tablespoons extra virgin olive oil
- Juice of 2 lemons (about ¼ cup / 60ml)
- Zest of 1 lemon
- 4 cloves garlic, minced
- 1 teaspoon dried oregano
- ½ teaspoon ground cumin
- 1 teaspoon kosher salt (plus more to taste)
- Black pepper, to taste
- 1 cup full-fat Greek yogurt
- ½ medium English cucumber (about 1 cup / 150g), grated
- 1 tablespoon fresh dill, chopped
- 1 teaspoon lemon juice
- 1 small clove garlic, minced or grated
- ½ teaspoon salt
Instructions
- Pat chicken breasts dry and cut into 1-inch uniform cubes.
- In a medium bowl, whisk together olive oil, lemon juice, lemon zest, minced garlic, oregano, cumin, salt, and pepper until emulsified.
- Add chicken cubes to the marinade, toss to coat evenly, cover, and refrigerate for at least 30 minutes (up to 4 hours).
- While chicken marinates, grate the cucumber and squeeze it tightly in a clean kitchen towel or cheesecloth to remove excess liquid.
- In a small bowl, combine Greek yogurt, squeezed cucumber, minced garlic, chopped dill, lemon juice, and salt. Stir well and set aside.
- Thread chicken cubes onto skewers, leaving small spaces between pieces.
- Preheat grill or grill pan to medium-high heat and lightly oil the grates.
- Grill skewers for 10-12 minutes, turning every 3-4 minutes, until internal temperature reaches 165°F (74°C).
- Let chicken rest for 2 minutes before serving with tzatziki on the side.
Notes
Ensure cucumber is thoroughly squeezed to prevent watery tzatziki. Do not marinate chicken longer than 4 hours as acid can make meat mushy. Let chicken rest after grilling to retain juices. Tzatziki can be made ahead and stored in the fridge for 4-5 days.
