  • ½ pound ground pork (optional)
  • 2 large eggs
  • ½ cup whole milk
  • 2 slices white or wheat bread, torn into pieces (or 1 cup breadcrumbs)
  • 1 medium onion, finely diced
  • 3 cloves garlic, minced
  • 1 tablespoon dried parsley
  • 1 teaspoon dried thyme
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • ½ cup ketchup
  • 2 tablespoons brown sugar
  • 1 teaspoon apple cider vinegar
  • 1 teaspoon Worcestershire sauce

Instructions

  1. Preheat oven to 350°F (175°C).
  2. In a large bowl, combine the torn bread and milk. Let sit for 5 minutes until the bread absorbs the milk and forms a paste (panade).
  3. Add the ground beef, ground pork (if using), eggs, diced onion, minced garlic, parsley, thyme, salt, and pepper to the bowl.
  4. Gently mix the ingredients until just combined. Do not overmix to avoid tough meat.
  5. Transfer the mixture to a 9×5 inch loaf pan, pressing down evenly to remove air pockets. Alternatively, shape into a loaf on a baking sheet.
  6. In a small bowl, whisk together ketchup, brown sugar, apple cider vinegar, and Worcestershire sauce to make the glaze.
  7. Pour half of the glaze over the top of the meatloaf.
  8. Bake for 30 minutes.
  9. Remove from oven and spread the remaining glaze over the top.
  10. Continue baking for another 15-20 minutes, or until the internal temperature reaches 160°F (71°C).
  11. Remove from oven and let rest for 10 minutes before slicing to allow juices to redistribute.

Do not overmix the meat to prevent toughness. Use a thermometer to ensure the internal temperature reaches 160°F. Let the meatloaf rest for 10 minutes before slicing to keep it juicy. If using lean beef, add an extra egg and more milk for moisture. Leftovers can be stored in the fridge for up to 4 days or frozen for up to 3 months.
