Description
A simple, 3-ingredient no-bake snack made with peanut butter, bananas, and oats. These energy bites taste like cookie dough, require no cooking, and are perfect for meal prep.
Ingredients
Scale
- 2 medium ripe bananas
- 1 cup (250g) creamy peanut butter
- 1.5 cups (120g) old-fashioned rolled oats
- Optional: 1/2 cup mini chocolate chips, 2 tbsp chia or flax seeds, or pinch of salt
Instructions
- Peel the bananas and place them in a large mixing bowl. Mash them thoroughly with a fork until smooth with no large chunks remaining.
- Add the peanut butter to the mashed bananas. Stir until the mixture forms a thick, uniform paste.
- Add the rolled oats to the bowl. Fold the oats into the peanut butter mixture using a spatula until fully combined and no dry spots remain.
- Using a small cookie scoop or teaspoon, portion out the mixture. Roll each portion between your palms to form smooth balls.
- Place the rolled bites on a baking sheet lined with parchment paper or a plate.
- Refrigerate the bites for at least 1 hour to firm up before serving.
- Store in an airtight container in the refrigerator for up to 1 week or in the freezer for up to 3 months.
Notes
Use very ripe, spotted bananas for natural sweetness and easier mashing. If the mixture is too sticky, wet your hands slightly with water before rolling. Do not overmix the oats to maintain a chewy texture. These are best served chilled.
